Wine
Yeringberg Chardonnay vines were planted in 1974 and 1981 in the estate vineyard at Coldstream in the Yarra Valley. The cool climate and silty clay soils with scattered buckshot gravel are an ideal growing environment.
The grapes are destemmed, crushed and basket pressed. Two thirds are fermented in stainless steel tanks before being transferred to French oak barrels mid-ferment, while the remaining one third ferments entirely in barrel with wild yeasts.
After partial malolactic fermentation the wine is aged on lees in new and seasoned French oak for 10 months before bottling without fining.
Straw yellow, Yeringberg Chardonnay has pronounced stone fruit flavours and bright, driving acidity. It balances purity and stunning clarity within a powerful, concentrated framework. Cellaring potential is eight years.
